CHITOSE Group has collaborated with Bicerin, a long-established cafe in Turin, Italy, to create "Barch di Dama," a baked confectionery made with spirulina, a type of microalgae.
Bicerin has a history of over 260 years and continues to be loved by celebrities and dignitaries from all over the world to this day.
In addition to passing on traditional flavors and hospitality to future generations, CHITOSE is also committed to working toward the SDGs, and this collaboration has come to fruition as the company supports CHITOSE vision for a sustainable, recycling-oriented society.
Birch di Dharma is one of Bicerin's signature products, having been served by the Japanese government as part of its hospitality to world leaders at the G7 Ise-Shima Summit (2016) and the G20 Osaka Summit (2019).
This traditional sweet has been kneaded with spirulina, a superfood recognized by international organizations such as the WHO.
The spirulina we use is produced using CHITOSE's unique cultivation technology, in a way that places a low burden on the environment, using sunlight as the only energy source to fix carbon.
"Birch di Dama" means "Lady's Kiss" in Italian.
In keeping with the name, the completed collaborative products will be distributed as novelty items celebrating women's empowerment at the International Women's Day event "WEHealth2025," which will be held from March 7th to March 9th.
CHITOSE Group will continue to contribute to creating a sustainable society through food.
About Bicerin
Bicerin is the oldest cafe in Turin, Italy, founded in 1763.
In its 260-year history, Bicerin has been the home of many great men and women.
The marble table near the entrance that was the reserved seat of Italy's first Prime Minister, Camille Benso di Cavour, is still preserved at the flagship store in Turin.
Additionally, the chocolate drink named after the shop, "Bicerin," which is made from a secret recipe, is said to have been chosen by Hemingway as one of "100 things that should be preserved in the world."
At Bicerin, we continue our SDG activities by focusing on "starting with small things, one by one."
We will continue to proactively work on sustainability going forward.
